Meet the Chef
Your Chef, David Wiederholt
David trained at The Culinary Institute of America — the same school that produced Anthony Bourdain, Cat Cora, and a generation of the country's best chefs. After graduating, he cut his teeth in some of New York and Philadelphia's most demanding kitchens: Union Square Cafe under Danny Meyer, multiple Stephen Starr restaurants, and The Capital Grille. He cooked at the James Beard House — a career milestone most chefs only dream about.
Along the way, he took first place at the Philadelphia Burger Brawl, competing against some of the city's top restaurant teams. Today, David runs four restaurants — Red Barn Burgers, Hill Donut Co., 322 BBQ, and MrWing — feeding thousands of real customers every week. These aren't test-kitchen recipes. They're battle-tested in working restaurants.
Every Recipe Letter pairing is developed, tested, and written by David personally. His goal: bring restaurant-quality cooking to your home kitchen in a way that actually works — clear instructions, honest technique, and flavors that make you feel like you pulled off something special.

When does my first shipment arrive?
Orders placed before the 15th ship with the current month's pairing. Orders after the 15th ship with the following month. Most US deliveries arrive within 3-5 business days.
Can I skip a month or cancel?
Absolutely. You can skip any upcoming month or cancel your subscription at any time from your account dashboard. No questions asked, no penalties.
What is on the recipe card?
Each card is a blue-lined 4×6 on premium cardstock that folds into a pocket — the recipe on the inside, a tabbed top for filing in your recipe box, and room to tuck in the chef notes and shopping list. Sealed with a wax stamp. It is designed to feel like something you want to keep forever.
How do gift subscriptions work?
Choose a 3, 6, or 12-month plan and enter the recipient's shipping address. You can include a personalized note and schedule the start date. The first shipment arrives gift-wrapped.
Do you ship outside the US?
Not yet, but we are working on it. Join our waitlist and we will notify you as soon as international shipping is available.
What are the seasonal bonus pairings?
Four times a year, you receive a surprise bonus pairing tied to the season — think Thanksgiving feasts, summer grilling, holiday cocktail parties, and spring brunch. These are special edition cards that arrive in addition to your regular monthly delivery.
Do I start from recipe #1 or the current month?
You jump right into the current month's pairing — everyone receives the same card at the same time. If you want to collect earlier cards, we offer a back-catalog bundle.

Every card has a QR code that unlocks the digital recipe, a step-by-step video walkthrough, technique notes, and your personal recipe archive that grows with each shipment.
